I guess this might be unpopular but I think those are reasonable categories to ask for when you invite a large group. Doesn‘t have to mean you have a full menu prepared for everyone but gives the chance to plan so everyone can have good food. Get a meat and a vegan/vegetarian main dish, plan side that also can stand alone (e.g. not just plain green salad) that compliment them and tick the other boxes or just have a buffet with options for everyone. Most of the boxes can easily be checked with just offering one vegan dish without nuts.

Why is everyone in 1st world countries such a pussy? If you go to a wedding around here in Slovakia, noone would ever ask you wat you want. You get the same stuff that everyone gets. If you really have a medical reason, you can tell them yourself and be the one person in entire room with different meal. Also, you would be served probably last.

Why does everyone have such a problem with this? I think it's very considerate of the wedding couple to accomodate their guests' dietary requirements. If you're planning a party obviously you can't cater for everybody but you at least try so that your friends enjoy themselves. That's just basic decency.

Well lactose and nuts and gluten can just outright kill people if they have allergies to them or intolerance. But I'm pretty convinced this is fake. I mean... You can't be vegan and also not eat nuts and seeds. Unless the poor soul is allergic to nuts AND vegan. Which... Idk that would suck. Either way, it's people's choices to be vegan and it's people's choices to have vegan and allergy related menue options. Not eating specific things doesn't make you a "pussy". In fact I bet you vegans have more willpower than you people who call them pussies. Takes some effort to turn down a rack of ribs.
